They are super easy, just 2 eggs, cake mix, and a stick of butter. I used to see how fast I could whip them up, running back and forth from the fridge, throwing everything into my KitchenAid and turning it on super high. These can be made in less than 1 minute. At least the prep.
Sometimes I've had issues with chocolate cake mixes, I don't know why, but I have never had problems with vanilla cake mixes.
These cookies were destined to happen. I had just treated myself by using up my funfetti cake mix and was pulling these out of the oven when my little brother ran up with my jar of nutella. Which I quickly took away. Nutella is not safe in two year old hands. It's probably not safe in my hands either, but anyway, I quickly decided that nutella cookie sandwiches are much better than plain old cookies.
I debated calling these whoopie pies, but they weren't really whoopie pies, they were cookie sandwiches. Nutella sandwiched between funfetti cookies. Too easy and delicious to not make.

Funfetti Nutella Cookie Sandwiches
Chewy delicious funfetti cookies sandwiching nutella. Easy and so good!
Makes: about 10 sandwiches Prep Time: 3 min. Total Time: 12 min.

Ingredients:
- 1 box funfetti cake mix
- 2 eggs
- 1 stick of butter
- nutella about 5 tablespoons
- Preheat oven to 350. Grease a cookie sheet.
- Combine cake mix, eggs, and butter.
- Roll into balls and place on cookie sheet. Bake for 9 min.
- Let cool, then spread nutella on one cookie, then place another cookie on top.
*I like the texture better if you take off about 2 or 3 tablespoons from the butter
These cookies are also super adaptable. You could use whatever cake mix you want, I really want to try red velvet.

Mmmm these sound amazing! I made cake mix cookies awhile back and they were so good. Pairing them with nutella would be out of this world!
