Rocky Road Muddy Buddies

 When I like something, I crazy like it.

Lion King. We watched pretty much every day of the summer when I was 9. I can still quote it word for word when I watch it. (P.S. I am no fun to watch movies with. Commenting, talking, quoting, pointing out stuff in the background, I just can't stop)

My brown ballet flats. I wore them every day for two months. Straight. And I still wear them all. the. time. They have feet marks in them where my toes are. But, they're super cute and comfy and go with everything I wear. Kind of like my favorite pair of capris.

Pig latin. Me and my sister talked like this for a week. My brother pretty much went crazy. It'sway a ameshay, ightray?

The Carpenters. Obsessed. I have every single song memorized. And I sing along with it in the car. I stopped listening to them for a while (lost the CD) and just yesterday started singing along again. (I'm on top of the world, looking, down on creation and the only explanation I can fiiiiind, is the love I've found ever since you've been around, your love has put me at the top of the world)

Muddy Buddies. Seriously. I just remade these ones yesterday. I'm addicted. My brother asked me the other day "Becca, when are you going to stop making muddy buddies?" Uh, the answer is never. I just can't get enough of the crunch, the powdered sugar, and the easiness of it all!

I've been trying to make these frosting muddy buddies for a while, and it wasn't working out. I wanted to go back to the normal PB and chocolate muddy buddies. But I still had to change it up a little.

This time I tried ice cream with muddy buddies. I wanted chocolate to really shine (chocolate is the base in rocky road ice cream) so I added less peanut butter and added a tablespoon of ice cream. It made it super creamy and yummy!

Oh wait, before I get ahead of myself . . . these are normal muddy buddies with less peanut butter, ice cream melted in, and with chunks of nuts and marshmallows all over. Super good.

 I partially melted some of the marshmallows with the chocolate mixtures. This gives you big clumps of muddy buddies that are amazing, gushing with peanut butter and covered with powdered sugar, totally the best part.

You can use whatever nut butter you want, walnut, almond, I think they'd all be good. Nutella actually might be a good idea, but I like the peanut butter best.

Whichever way you do it, these muddy buddies are to die for, perfect snack for parties, potlucks, or just chilling out on the couch watching pink panther (another obsession)

 Rocky Road Muddy Buddies Muddy buddies that taste just like your favorite ice cream! These have chunks of marshmallows and crunchy nuts, the perfect twist to an addictive snack! Prep Time: 15 min.   Total Time: 15 min.  Serves: 7 Ingredients:
  • 4 1/3 cup chex
  • 2/3 cup chocolate chips
  • 3 tablespoons peanut butter
  • 2 tablespoons butter
  • 1 teaspoon vanilla 
  • 1 1/2 tablespoons rocky road ice cream
  • 1 cup powdered sugar
  • 1 1/4 cup marshmallows 
  • 1/3 cup nuts
Directions:

  1. Measure cereal and 6 tablespoons of marshmallows (5/8 cup) into a large bowl, set aside.
  2. In a microwavable bowl (big enough to hold 1 cup of liquid) microwave chocolate chips, peanut butter and butter for one minute. Stir, and add ice cream. Microwave until smooth, add vanilla. 
  3. Add 6 tablespoons of marshmallows (5/8 cup) to the mixture until they start to slightly melt. Pour the mixture over cereal, stir with a rubber spatula until evenly coated. 
  4. Use a large spoon (or whatever method works for you) to scoop the cereal into a gallon size plastic bag. Add powdered sugar and nuts. Seal bag and shake until coated. You can serve this whenever, I like it best warm and melty, and it's crunchier on the first day. 
Notes:
*if you don't have ice cream, you can just replace it with peanut butter. It won't have exactly the same texture, but it's still pretty good.

 These are so so SO good! They're my favorite muddy buddies by far. Like, these are better than the original. The only ones that come close to this are the cinnamon roll muddy buddies (super good).
