Candy Corn Popcorn

My family got a popcorn machine this summer.

It's been pretty nice, but have you ever had too much of a good thing?

Then it becomes a bad thing.

Like the time I bought a jumbo bag of gummy bears and ate the whole thing in a hour. I threw up gummy bears and it took me three years before I could even look at them again.

Or sugar-snap peas. Never leave a four year old unattended in a garden full of ripe peas. Never, ever, again.

My brother has become a little popcorn obsessed. Literally every day of August after we got it we had popcorn.

It was health{ier} popcorn, because we used coconut oil and used less butter and more salt. But now I cannot STAND the smell of coconut oil. Warm coconut oil smelling up our house everyday. Ugh, it sounds okay but it makes me gag.

So while I like popcorn, I now don't like it that much. I'm a muddy buddy girl at heart.

But, I was able to overcome my popcorn problems with candy corn. I'm a bit candy corn obsessed. I go crazy for them and have my own little ritual for eating the candy corn pumpkins. And in January this year I came up with a week of recipes (I'm seasonally challenged).

This is like caramel corn's jazzed up Halloween sister. It's a medley of crunchy caramel corn, and gooey sticky caramel corn. I like the gooey sticky kind, but I also like the crunchy kind from those cans.

This is sort of a hybrid. It's chewy and sort of soft, but also crunchy.

This was SUPER easy, only 4 ingredients, and tastes so good! Perfect for Halloween!

Candy Corn Popcorn
Popcorn covered in melted candy corn, creating a Halloween version of caramel corn.

Ingredients:
  • 4-5 cups Popped Popcorn
  • 1 cup of candy corn (you can add less depending on how coated you want your popcorn)
  • 3 tablespoons of butter
  • 1 tablespoon of brown sugar
  • 1/2 tsp of vanilla
  • white chocolate
Directions:
  1. Have your popped popcorn ready in a large bowl. 
  2. Start to melt the butter on medium heat. Add the candy corn, vanilla, and brown sugar to the butter and stir to combine as it melts.
  3.  Next, pour the liquid candy corn on top. Spray a spatula or wooden spoon with cooking spray and gently stir to coat well. Pour the coated popcorn onto a greased cookie sheet and allow to cool until set.
  4. Drizzle with white chocolate. Once cool, break up and serve.
Notes:
*you want to have everything ready before you pour the candy corn on because if it hardens up to fast it can stick to the pot.

   So I actually have a tutorial for you guys!
For the good directions, look at the recipe. This just has pictures to follow along.

Start melting the butter then add the candy corn and other stuff
Then once the candy corn looks like this

Pour it on the popcorn that was sitting in a large bowl (not a metal one like in the picture)

Then spread it out on a sheet to harden
Then drizzle with white chocolate and more candy corns, then let set. Once set, break it up and serve. It tastes best on the first day, on the second it get's really hard and could break a tooth.
