S'mores Gooey Butter Cake

So by now, you've probably figured out that I like gooey butter cake. I've made 4 versions, like this one and this one.

I actually made this last summer, but the photos turned out awful, and honestly I just wanted to make s'mores gooey butter cake again.

Gooey butter cake is a traditional New Orleans dessert. Sometimes it can be a little hard to recreate, but after a few tweaks I was able to come up with an easier version that I now adapt all the time.

Gooey butter cakes are really REALLY gooey. The key is to let them cool completely and set up. The texture is unbelievable. Pairing s'more with it took it out of this world. It has a flakey cream cheese marshmallow topping, a fudgy center, and crunchy graham cracker crust.

This is one of my family's favorite desserts I've made. You have got to give these a try!

S'mores Gooey Butter Cake 
A fun summer twist on the New Orleans treat, with graham cracker crust, chocolate filling, marshmallow, and crunchy meringue top. 
Ingredients:
  • 3/4 cup melted butter 
  • 3 cups of graham cracker crumbs (about 2 packages)
  • 4 tablespoons sugar
  • 1/4 tsp. salt
  • 1/2 c. butter (1 stick)
  • 1 box chocolate cake mix
  • 3 eggs
  • 1 (8 oz.) pkg. cream cheese, softened
  • 3 1/2 cups powdered sugar
  • 1 tsp. vanilla
  • 2 cups marshmallow fluff
Directions:

  1.  Preheat oven to 350. In a medium bowl, mix 3/4 cup of  butter with graham cracker crumbs (I just crushed them with my blender), sugar and salt. Press crumb mixture into the bottom of an ungreased 9x13 cake pan. Bake until golden, 20 to 25 minutes.
  2.  While the crust is baking, mix together cake mix with 1 stick of butter and 1 egg. 
  3. Pat dough into the pan on top of the graham crackers. (once the graham crackers are out). 
  4. Use the back of a wet spoon to spread the marshmallow fluff over the dough. Try to spread it a little without moving the marshmallow fluff too much.   
  5. Cream together cream cheese, 2 eggs, powdered sugar and vanilla. Pour over cake mixture, spreading to the edges. Bake at 350 degrees for 40-45 minutes.  
Notes:
*make sure you completely cover the marshmallow fluff with the cream cheese layer
* when it comes out it seems very gooey, but after you let it cool completely, it sets up and is much better.

This dessert is heavenly and pretty simple to make. This definitely shouldn't be limited to the summer months!
